Shopping List:
3 peppers
1 tomato
2 carrots
1 onion
Spinach
2 potatoes
Broccoli
Strawberries
Plain Greek Yogurt
1 can black beans
Mexican soy crumbles
Brown Rice
Flour tortillas
Shredded Cheese
Cut up and Roast Veggies on sheet pan 375 degrees for 40-45 minutes while baking 2 potatoes at the same time (cook till done)
Cook Rice
Microwave Mexican crumbles
Meal 1:
Baked potato, broccoli, black beans, diced tomatoes, shredded cheese, topped with fat-free yogurt
Meal 2:
Brown Rice, Roasted Veggies, Black Beans with Fresh Strawberries
Meal 3:
Taco night: flour tortilla, Mexican crumbles, shredded cheese, spinach and diced tomato
Meal 4:
Leftover veggies, rice and black beans
