​​Preventing Foodborne Illness


Foodborne Illness (or food poisoning) is caused by eating contaminated foods or beverages. Most foodborne diseases are infections caused by a variety of bacteria, viruses, and parasites. Other diseases are poisonings caused by harmful toxins or chemicals that have contaminated food. Common symptoms of foodborne illness replicate those of the stomach flu: diarrhea and/or vomiting, abdominal cramps, fever, back aches, and fatigue lasting 1-7 days.

 

It's important to know which foods are associated with foodborne illness in order to prevent the next case.


  • Raw foods of animal origin - raw meat, poultry, eggs, unpasteurized milk & raw shellfish - are the most likely to be contaminated.
  • Fruits & Vegetables can be contaminated with animal waste when manure is used to fertilize produce in the field or when unclean water is used for washing the produce.
  • Any food item touched by someone who is ill with diarrhea, vomiting, or foodborne illness can quickly become contaminated. Foods that are not cooked (e.g., cut fruit & salads) can pass illnesses to others.
